S.O.S. Cocktail from Velveteen Lounge Kitsch-en Gilligan's Island birthday episode

S.O.S.

1/4 cup fresh chopped pineapple
A handful of fresh mint
1 1/2 oz amber rum
1 1/2 oz dark rum
3/4 oz dry curacao
1/2 oz fresh lime juice

Muddle pineapple and mint in a shaker glass, then add remaining ingredients. Shake vigorously with ice and pour into a hollowed out fresh pineapple (a ratcheting pineapple slicer makes this job much easier). Garnish with mint.

 

 

 

 

Mini Coconut Cream "Pies" from Velveteen Lounge Kitsch-en Gilligan's Island birthday episode

Mini Coconut Cream "Pies"

1/2 cup sugar
4 TBSP cornstarch
Dash of salt
1 cup heavy cream
1 cup almond-coconut milk
3 tsp coconut rum
8 - 10 ginger snaps
Whipped cream and shredded coconut for topping

Combine sugar, cornstarch and salt in a saucepan. Gradually add heavy cream and almond-coconut milk, stirring constantly over medium heat. When pudding begins to thicken stir for 2 – 3 minutes more. Remove from heat and stir in coconut rum. Pour into small cups over ginger snaps and refrigerate until firm. Top with whipped cream and shredded coconut. Mary Ann would be so proud!
