Velveteen Lounge Kitsch-en: Boozy Brunch!
2 oz light rum
1/2 oz Campari
1 oz orange-carrot juice
1/2 oz fresh lime juice
3 dashes of aromatic bitters
Shake all ingredients with ice and strain into a cocktail glass. Cheers!
2 scrambled eggs
3 - 4 TBSP cooked rice
2 TBSP finely chopped red Bell pepper
2 TBSP chopped green onion
2 slices cooked bacon, crumbled
Combine all ingredients except the eggroll wrappers and beaten egg. Place about two tablespoons of mixture in the center each eggroll wrapper. Rub the perimeter with egg to help with sealing and fold according to video directions (found here). Deep fry in oil heated to 350°, turning until evenly browned. Drain and serve with maple syrup, sriracha sauce or anything else you like!
